Vegan Chocolate Chip Granola Bars

Ingredients

  • 1 1/2 cups oats
  • 1/4 cup peanut butter
  • 2-3 tbsp maple syrup
  • 2 tbsp unicorn superfoods vanilla plant protein powder
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • Vegan chocolate chips
  • Extra add-ins: chia seeds, hemp seeds, pecans, almonds, cinnamon

Preparation

  1. Prepare the flax egg by combining 1 tbsp ground flax with 3 tbsp water. Set aside for 5-10 minutes.

  2. In a mixing bowl, combine the prepared flax egg, peanut butter, maple syrup, and unicorn superfoods vanilla plant protein powder.

  3. Add the oats to the wet ingredients and mix well.

  4. Incorporate the extra add-ins like chia seeds, hemp seeds, pecans, almonds, and cinnamon into the mixture.

  5. Fold in the vegan chocolate chips.

  6. Line a baking dish with parchment paper and transfer the mixture into the dish. Press it down evenly.

  7. Preheat the oven to 350°F (175°C).

  8. Bake the granola bars for approximately 15 minutes, or until they are golden brown.

  9. Allow the bars to cool completely before slicing. This step is crucial for the bars to hold their shape.

  10. Once cooled, slice the bars into desired sizes.
