Chilled Avocado Gazpacho Soup with Spirulina

Ingredients

  • 1 medium avocado
  • 2 medium cucumbers, peeled and deseeded
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons finely diced shallot
  • 1 tablespoon red or white wine vinegar
  • 3/4 teaspoon salt
  • 1 1/2 cups filtered water
  • spirulina (amount not specified, add as desired)

Garnish

  • avocado
  • toasted hazelnuts
  • nigella seeds
  • sprouts
  • salt and pepper

Preparation

  1. Add all ingredients except spirulina to a blender and mix until smooth.

  2. Mix in spirulina after blending to maintain cellular structure and maximum nutrient benefits.

  3. Garnish with avocado, toasted hazelnuts, nigella seeds, sprouts, salt, and pepper before serving.
