Creamy Green Gazpacho with Mint and Coconut
Ingredients
- 200g peas, steamed and cooled
- 200g zucchini, steamed and cooled
- 1 avocado
- Handful fresh mint leaves
- 800ml cold water
- 200ml coconut milk
- Juice of half lemon
- Salt and pepper to taste
Preparation
In a blender, process all ingredients until a smooth texture is formed.
