Creamy Green Gazpacho with Mint and Coconut

Ingredients

  • 200g peas, steamed and cooled
  • 200g zucchini, steamed and cooled
  • 1 avocado
  • Handful fresh mint leaves
  • 800ml cold water
  • 200ml coconut milk
  • Juice of half lemon
  • Salt and pepper to taste

Preparation

  1. In a blender, process all ingredients until a smooth texture is formed.

  2. Serve and enjoy.
