Chocolate Peanut Butter Protein Bars
Ingredients
- 2 cups pitted medjool dates
- 3/4 cup runny, unsweetened peanut butter (salted works)
- 1/3 cup protein powder of choice
- 6 tablespoons Dutch processed cocoa powder
- 2 tablespoons raw honey
- 1/2 teaspoon vanilla extract
Topping
- 1/3 cup chocolate chips
Preparation
Line an 8x8 baking dish with nonstick parchment; use binder clips to hold the sides down.
Combine all ingredients in a food processor and pulse until fully combined.
Empty into the baking dish and use dampened fingers or spatula to press into an even layer.
Sprinkle chocolate chips on top and press into dough.
Refrigerate at least 2 hours before using a sharp knife to slice into whatever sized bars you like.
Leftovers will keep tightly sealed in the fridge up to 1 week.
