Cookies and Cream Chocolate Chip Pancakes

Ingredients

  • 60g spelt flour (buckwheat flour works the same way)
  • 20g Vegan Protein Cookies & Cream
  • 5g almond butter
  • 1 tsp psyllium husk
  • 110g almond milk
  • Vanilla Flavordrops
  • 1/2 banana (mashed)
  • Sweetener of your choice (Dani used erythritol)
  • 1 teaspoon baking powder
  • 15g chocolate drops

Preparation

  1. Mash the banana.

  2. Mix the dry ingredients together: spelt flour, vegan protein, psyllium husk, baking powder, and sweetener.

  3. In a separate bowl, combine the wet ingredients: almond milk, almond butter, vanilla flavordrops, and mashed banana.

  4. Combine the wet and dry mixtures until just combined.

  5. Fold in the chocolate drops.

  6. Heat a non-stick pan over medium heat and cook the batter in small portions until golden brown on both sides, flipping once.
