Creamy Pasta with Garlic Fried Brussels Sprouts
Ingredients
- 2-3 servings of pasta or spaghetti of choice
- 3 garlic cloves
- 1/2 red onion
- 2-3 tbsp oil
- Brussels sprouts
- Tofu
- Cornstarch
- Salt
- Pepper
- 1/2 tbsp Dijon mustard
- 1/2 tbsp lemon juice
- Japanese soy sauce (optional)
- 200-300ml plant-based cooking cream
- Vegan parmesan (for serving)
Preparation
Boil 2-3 servings of pasta or spaghetti according to the package instructions.
Mince 3 garlic cloves and chop 1/2 red onion. In a frying pan, heat 2-3 tbsp oil and fry the garlic and onion until golden brown.
Prepare the Brussels sprouts by removing the outer layer and cutting them in half. Add them to the frying pan and allow them to fry until crispy.
Chop tofu into small cubes. Coat the tofu in cornstarch and add it to the pan. Season with salt, pepper, Dijon mustard, lemon juice, and optional Japanese soy sauce. Fry until crispy.
Pour in 200-300ml of plant-based cooking cream. If needed, add a little water or pasta water. Stir well.
Once the pasta is cooked, drain it and add it to the frying pan. Mix well with the sauce and ingredients. Serve with vegan parmesan on top.
