Crispy Paneer in Naan with Fresh Green Chutney

Ingredients

  • 250gms paneer
  • 1 tablespoon cornflour
  • Rapeseed oil for frying
  • 1 red onion
  • 100gms salad leaves
  • Green chutney

4 large naan

  • 300gms self-raising flour
  • 150-200gms yogurt
  • 1 tsp nigella seeds
  • 1 clove minced garlic (optional)
  • Pinch of salt

Preparation

  1. Thinly slice the red onion and soak it in vinegar while preparing other ingredients.

  2. For the paneer, soak ready-made paneer in hot water for 15 minutes to soften it, then dry and toss in cornflour. Pan fry in a little olive oil, drain, and set aside.

  3. To make the naan, mix all naan ingredients and knead the dough for a few minutes. Add more yogurt or water if needed. Let the dough rest for a couple of hours, or cook immediately by dry frying in a pan over medium heat for a few minutes on each side.

  4. For assembling, layer the naan with salad leaves, crispy paneer, pickled onions, and green chutney.
