Ginger Bread Banana Bread

Ingredients

  • 1/2 cup avocado oil (I used @grove.avocado.oil)
  • 1/2 cup maple syrup
  • 2 ripe bananas, mashed
  • 2 eggs/egg replacer
  • 1/3 cup plain yoghurt (I used soy Greek yoghurt)
  • 1 teaspoon vanilla bean paste
  • 1/4 cup molasses (optional)
  • 2 cups plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon dried ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1 banana, for decorating

Preparation

  1. Preheat oven to 180°C, grease and flour a baking tin loaf.

  2. In a mixing bowl, add mashed bananas, oil, and maple syrup. Beat together using a hand electric mixer.

  3. Beat in eggs/egg replacer, vanilla, yoghurt, and molasses.

  4. Sift in flour, baking powder, and spices. Mix until combined.

  5. Transfer batter into the prepared tin loaf.

  6. Slice the remaining banana in half lengthwise and arrange on top of the batter.

  7. Bake for 50 to 60 minutes until golden brown and a toothpick inserted into the center comes out clean.

  8. Allow 5 minutes to cool in the tin loaf before removing. Cool completely on a rack.

  9. Slice and enjoy!
