Ultra Moist Chia Seed Banana Bread

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup avocado oil
  • 1/2 cup raw brown sugar
  • 2 eggs (use flax-seed egg substitute, if vegan)
  • 1/2 cup Greek yogurt (use dairy-free yogurt, if vegan)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla bean paste
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 tablespoons chia seeds

Preparation

  1. Preheat oven to 180°C (350°F), grease and flour a baking tin loaf.

  2. In a mixing bowl, add mashed bananas, avocado oil, and raw brown sugar. Use a hand electric mixer to beat them together until well combined.

  3. Beat in the eggs, Greek yogurt, apple cider vinegar, and vanilla bean paste until the mixture is smooth.

  4. Sift in the all-purpose flour, baking powder, and baking soda. Mix until the dry ingredients are incorporated into the wet mixture.

  5. Gently fold in the chia seeds.

  6. Transfer the batter into the prepared baking tin loaf.

  7. Bake for 50 to 60 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.

  8. Allow the bread to cool in the tin loaf for 5 minutes before carefully removing it. Place it on a cooling rack to cool completely.

  9. Once cooled, slice the banana bread and enjoy!
