Ultra Fluffy Blueberry Yogurt Pancakes
Ingredients
- 350 g Greek yogurt or dairy-free yogurt
- 2 eggs, lightly beaten or flax-seed eggs
- 1 teaspoon vanilla bean paste
- 1 tablespoon raw brown sugar (optional)
- 1 cup all-purpose flour, sifted
- 1 teaspoon baking soda
- 1 tablespoon apple cider vinegar
- 1/2 cup fresh blueberries
For serving
- fresh blueberries
- honey or maple syrup
Preparation
In a mixing bowl add yogurt, eggs, vanilla and sugar, mix until combined.
Mix in sifted flour, then add baking soda and vinegar, mix until well combined and no lumps remain.
Fold in blueberries and mix until just combined. Let the mixture sit for 5 minutes.
Drop about 2 tablespoons of the batter onto the pan over medium heat. When bubbles pop, flip the pancake over. Cook for another couple of minutes. Repeat with the remaining batter.
Serve pancakes warm with fresh blueberries and honey or maple syrup. Enjoy right away!
