Easy Authentic Vegan Pad Thai

Ingredients

  • 0.5 cup Tamarind Concentrate
  • 5 tablespoons Light Soy Sauce
  • 50g Palm Sugar
  • 3 Thai shallots or 1 banana shallot, sliced
  • 1 clove garlic, minced
  • 160g Rice Noodles (2mm thickness)
  • 1 cup chives cut into 1 inch length
  • 2 cups bean sprouts
  • 200g Tofu cut into cubes

Preparation

  1. Soak noodles in cold water for 1 hour

  2. Mix together Pad Thai sauce ingredients to make a sauce

  3. In a hot pan with oil, saute shallot and garlic for 1 minute

  4. Add soaked noodles and Pad Thai sauce, turn heat up to medium-high. Stir and toss for a couple of minutes then add in bean sprouts, chives, and tofu. Mix well and ensure noodles are fully cooked and all ingredients are nicely mixed

  5. Serve with traditional garnishes such as crushed roasted peanuts, lime wedges, chili flakes, and fresh bean sprouts
