Easy Korean Cucumber Kimchi

Ingredients

  • 8 Persian cucumbers
  • 1/2 tsp salt
  • 2 tbsp minced garlic
  • 4 green onion stalks
  • 1 small onion
  • 2 tbsp of gochugaru
  • 2 tsp sugar
  • 1/4 cup rice vinegar
  • 1/4 sesame oil
  • a sprinkle of sesame seeds

Preparation

  1. Slice the cucumbers into spears or coins.

  2. Toss the sliced cucumbers with salt and let sit for 15-30 minutes to release moisture.

  3. In a bowl, mix minced garlic, green onion stalks, onion, gochugaru, sugar, rice vinegar, and sesame oil to create the seasoning.

  4. Combine the salted cucumbers with the seasoning mixture.

  5. Sprinkle with sesame seeds and refrigerate for at least 30 minutes, preferably overnight, for optimal flavor.

Tips

  1. Serve with rice and grilled chicken or beef for a complete meal.
