Easy Vegan French Toast Oats

Ingredients

  • 1/2 cup rolled or quick oats
  • 1 tbsp nutritional yeast
  • 1 tbsp ground flax seeds
  • Pinch of salt
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of cardamom
  • 1/2 mashed ripe banana
  • 1 cup unsweetened coconut milk

Preparation

  1. Combine all ingredients in a saucepan and stir together.

  2. Bring mixture to a simmer on the stovetop and allow to cook and thicken for about 3-5 minutes.

  3. Remove from stovetop and pour into serving bowl.

  4. Add desired toppings and enjoy.
