Giant Summer Roll with Peanut Sauce
Ingredients
- 3 rice paper sheets
- 1 large iceberg lettuce leaf or romaine lettuce
- 1 cucumber
- 1 carrot
- 1 radish
- 1 green apple
- 1/2 avocado
Peanut sauce
- 1/4 cup peanut butter
- 1-2 tbsp soy sauce or tamari
- 1 tbsp rice vinegar
- 1 tbsp sweetener (maple syrup or dates syrup)
- 1 tsp light miso paste
- Water as needed
Preparation
Start by making the sauce to keep the summer roll as fresh as possible.
Mix peanut butter, soy sauce, rice vinegar, sweetener, and miso paste.
Add water a tablespoon at a time to loosen the sauce until it reaches the desired consistency and set it aside.
Thinly slice the vegetables of choice, using a julienne peeler for cucumber and carrot and a sharp knife for the rest.
Prepare a wide bowl with cold water and lay a damp towel or wooden board on your work surface.
Dip each of the three rice paper sheets in cold water for about 10 seconds and lay them overlapping in the center, moving quickly to avoid tearing.
Place the lettuce in the center, add all the vegetables on top, and start folding: first fold the bottom towards the center, then both sides, and finally roll upwards like a burrito.
Ensure it is completely sealed and wrap with another rice paper sheet if needed.
Serve immediately with the creamy peanut sauce and enjoy.
