Gluten-Free Blueberry Oatmeal Cookies

Ingredients

  • 1/2 cup softened butter (or coconut oil)
  • 3/4 cup brown sugar packed
  • 1 tsp vanilla
  • 1 egg
  • 1 cup GF all purpose flour
  • 1 1/4 cup rolled oats
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup blueberries

Preparation

  1. Preheat oven to 350°F

  2. Beat together butter and sugar until smooth.

  3. Beat in egg and vanilla for two minutes.

  4. Add in the rest of the ingredients and fold in blueberries last.

  5. Set the dough for 20 minutes in the fridge.

  6. Bake for 10-13 minutes.
