Gnocchis for Dinner

Ingredients

  • 1 jar organic no salt added tomato sauce
  • 2 - 4 Tbsp organic tomato paste
  • 1 can organic pinto beans or black beans (or switch to lentils)
  • A big handful of Spinach
  • 8 oz sautéed mushrooms
  • Sautéed onions and garlic
  • Salt and pepper to taste

Preparation

  1. Just cook the tomato sauce with the tomato paste for a couple minutes and then add the beans, sautéed mushrooms, onions and garlic, and spinach

  2. Heat up for another couple minutes and then add the gnocchi
