Balsamic with Mushrooms

Ingredients

  • 3 large chestnut mushrooms sliced
  • 1 tbsp balsamic
  • 1/2 tsp garlic granules
  • 1/2 tsp black pepper (and more to top)
  • small handful chopped parsley (and more to top)
  • 2 handfuls spinach
  • 1 tsp fresh lemon juice
  • 3 heaped tbsp hummus
  • pinch salt
  • Splash of water

Preparation

  1. Add the mushrooms to a pan with the balsamic on medium heat, allow to cook down for 2 mins

  2. Add in the garlic, salt , pepper, lemon juice, spinach, a splash of water & mix together

  3. Now add in the hummus, mix through and cook for a further 1/2 mins

  4. Serve up with a slice of sour dough, spread a layer of mustard (if you like it) top with the creamy mushrooms add a little more parsley and black pepper, enjoy the goods
