Balsamic with Mushrooms
Ingredients
- 3 large chestnut mushrooms sliced
- 1 tbsp balsamic
- 1/2 tsp garlic granules
- 1/2 tsp black pepper (and more to top)
- small handful chopped parsley (and more to top)
- 2 handfuls spinach
- 1 tsp fresh lemon juice
- 3 heaped tbsp hummus
- pinch salt
- Splash of water
Preparation
Add the mushrooms to a pan with the balsamic on medium heat, allow to cook down for 2 mins
Add in the garlic, salt , pepper, lemon juice, spinach, a splash of water & mix together
Now add in the hummus, mix through and cook for a further 1/2 mins
Serve up with a slice of sour dough, spread a layer of mustard (if you like it) top with the creamy mushrooms add a little more parsley and black pepper, enjoy the goods
