Healthy Indonesian Gado-Gado with Peanut Sauce
Ingredients
- 1/2 cup finely chopped onions
- Fresh ginger
- 3 garlic cloves
- 3/4 cup of Peanut butter
- 1 tbsp Maple Syrup
- juice of 1 lemon
- 1 Apple cider vinegar
- 2 cups of water
- Tamari Sauce
Spices
- 1 tbsp Cayenne pepper
- salt
- smoked paprika
- Bay leaves
Preparation
In a saucepan, cook the onions, garlic, and chopped ginger with a splash of water until brown.
Add the rest of the ingredients and mix, then add a bay leaf.
Let it simmer for 20 minutes on low heat until it thickens.
You can either cook tofu or tempeh chunks in the sauce or serve with vegetables.
