Healthy Indonesian Gado-Gado with Peanut Sauce

Ingredients

  • 1/2 cup finely chopped onions
  • Fresh ginger
  • 3 garlic cloves
  • 3/4 cup of Peanut butter
  • 1 tbsp Maple Syrup
  • juice of 1 lemon
  • 1 Apple cider vinegar
  • 2 cups of water
  • Tamari Sauce

Spices

  • 1 tbsp Cayenne pepper
  • salt
  • smoked paprika
  • Bay leaves

Preparation

  1. In a saucepan, cook the onions, garlic, and chopped ginger with a splash of water until brown.

  2. Add the rest of the ingredients and mix, then add a bay leaf.

  3. Let it simmer for 20 minutes on low heat until it thickens.

  4. You can either cook tofu or tempeh chunks in the sauce or serve with vegetables.
