Homemade Pesto Chimichurri Sauce

Ingredients

  • 1 packed cup cilantro
  • 1 packed cup parsley
  • 2 garlic cloves
  • 2 tsp white wine vinegar
  • 1/4 cup sliced green onion
  • 1/4 cup toasted nuts (I used pistachios)
  • 1/4 tsp salt
  • 1/3 cup olive oil

Preparation

  1. Throw cilantro, parsley, garlic, vinegar, green onion, nuts, and salt into a food processor.

  2. Process all ingredients until combined.

  3. With the motor running, drizzle in olive oil.

  4. Scrape down the sides and taste.

  5. Adjust salt if needed.

  6. Store in a mason jar; it will keep for up to a week or longer.
