Homemade Pesto Chimichurri Sauce
Ingredients
- 1 packed cup cilantro
- 1 packed cup parsley
- 2 garlic cloves
- 2 tsp white wine vinegar
- 1/4 cup sliced green onion
- 1/4 cup toasted nuts (I used pistachios)
- 1/4 tsp salt
- 1/3 cup olive oil
Preparation
Throw cilantro, parsley, garlic, vinegar, green onion, nuts, and salt into a food processor.
Process all ingredients until combined.
With the motor running, drizzle in olive oil.
Scrape down the sides and taste.
Adjust salt if needed.
Store in a mason jar; it will keep for up to a week or longer.
