Homemade Tofu Corn Dogs with Easy Preparation

Ingredients

  • 1 cup whole wheat flour (GF option below)
  • 1 cup yellow corn meal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground mustard
  • 6 Tbl @earthbalance butter
  • 1/2 cup @theoatyeah oatmilk
  • 1/4 cup maple syrup
  • 12 1/2" strips of extra firm tofu
  • 12 wooden sticks

Preparation

  1. Preheat oven to 400 F. Place tofu strips on parchment lined baking sheet and bake while the oven preheats. About 15-20 minutes. Remove tofu once they look moisture free.

  2. While the oven preheats and tofu cooks prepare your corn wrapping. Whisk together the dry ingredients. Cut in the butter using a pastry blender, knives, or forks. The mix should look like little pebbles. Stir in the oatmilk and maple syrup using a heavy wooden spoon.

  3. Place dough on sheet of parchment paper. Place another sheet on top. Roll out to 1/4" thick. Push wooden stick into it center of the tofu strips. Cut a sheet of dough large enough to wrap around the Tofu. Using your hands, press it firmly around the Tofu.

  4. Place the prepared corndogs on the parchment lined baking sheet, spray with a little oil, bake for 15-20 minutes or until lightly browned. Enjoy!!!

Tips

  1. These also work well using a 1:1 gluten free flour blend like @bobsredmill

  2. Don't want a Tofu center? No problem! Use a veggie dog or even a steamed carrot! Get creative and get corndoggin.
