Homemade Vegan Spicy Coconut Green Beans Stir-Fry

Ingredients

Paste

  • 1 inch cube of ginger, peeled
  • 3 cloves of garlic, peeled
  • 1-2 tbsp garlic chili sauce
  • 2 tbsp water
  • 1 tbsp soy sauce
  • 1 tsp lemon grass paste
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • A small handful of cashews (optional)

Stir-fry

  • 1 lb of green beans
  • 1/2 red onion
  • 1 tbsp coconut oil
  • 1/4 cup coconut milk

Preparation

  1. Blend all of the paste ingredients together in a blender, scraping sides as you go.

  2. Heat oil in a large non-stick pan over medium heat. Add paste and cook until fragrant (1-2 mins). Add onion and cook for 3 more mins. Add green beans and mix well until the beans become coated in the paste and pour in coconut milk. Let simmer for 5 mins.
