Homemade Vegan Spicy Coconut Green Beans Stir-Fry
Ingredients
Paste
- 1 inch cube of ginger, peeled
- 3 cloves of garlic, peeled
- 1-2 tbsp garlic chili sauce
- 2 tbsp water
- 1 tbsp soy sauce
- 1 tsp lemon grass paste
- 1/2 tsp cumin
- 1/4 tsp turmeric
- A small handful of cashews (optional)
Stir-fry
- 1 lb of green beans
- 1/2 red onion
- 1 tbsp coconut oil
- 1/4 cup coconut milk
Preparation
Blend all of the paste ingredients together in a blender, scraping sides as you go.
Heat oil in a large non-stick pan over medium heat. Add paste and cook until fragrant (1-2 mins). Add onion and cook for 3 more mins. Add green beans and mix well until the beans become coated in the paste and pour in coconut milk. Let simmer for 5 mins.
