Lemon Poppy Seed Breakfast Oats

Ingredients

  • 1 cup oats
  • 4 cups plant-based milk
  • Juice and zest of 1/2 lemon
  • 2 tbsp maple syrup
  • 1 vanilla bean or 1 tsp vanilla extract
  • 1 pinch of salt
  • 1.5 tbsp poppy seeds
  • Handful of blueberries
  • Almond slivers

Preparation

  1. In a pot over high heat, combine oats, plant-based milk, lemon juice, maple syrup, vanilla, and salt.

  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about twenty minutes, stirring occasionally.

  3. Stir in the poppy seeds.

  4. Serve the cooked oats in bowls and top with blueberries and almond slivers.
