Ingredients

  • spelt flour - 2 cups
  • baking powder- 2tsp
  • baking soda 1/2 tsp
  • soy milk - 1 cup ( you can choose any plantbased milk)
  • pineapple chunks- 1/4 cup
  • olive oil - 1/2 cup
  • almonds pieces - 1/3 cup
  • coconut shredded - 1/2 cup
  • brown sugar - 1 1/2 cup
  • ginger powder- 1tsp
  • for coconut cream icing
  • coconut cream
  • pineapple essence - 1tsp
  • maple syrup - 2tbsp

Preparation

  1. Pre heat the oven to 180°c ane lightly grease a round shape cake tin with coconut oil

  2. Mix all the dry ingredients in a bowl , then add all the wet ingredients one by one and mix well making sure you don't over mix the mixture

  3. Transfer mixture into the baking dish and cover it with a foil and bake for 40 to 45 minutes or until cooked

  4. For coconut cream icing

  5. In a bowl scoop out coconut cream , add maple syrup, pineapple essence

  6. Use a beater or stand mixer to make fluffy coconut cream icing

  7. Once done layer it in your cool cake and decorate with your favorite toppings and serve
