Nourishing Vegan Salad Bowl with Tahini

Ingredients

  • 2 big handfuls dark leafy greens
  • Colourful baby tomatoes
  • Carrots
  • Courgette
  • Edamame beans
  • Tofu
  • Toasted sesame seeds

Marinade for tofu

  • Soy sauce
  • Smoked paprika
  • Garlic salt

Tahini dressing

  • Tahini
  • Soy sauce
  • Lemon

Preparation

  1. Steam the carrots, courgette, and edamame beans until tender.

  2. Marinate the tofu in a mixture of soy sauce, smoked paprika, and garlic salt.

  3. Cook the marinated tofu in a skillet until browned.

  4. Prepare the tahini dressing by mixing equal parts tahini, soy sauce, and lemon juice.

  5. Assemble the salad by placing dark leafy greens in a bowl, adding the steamed vegetables, baby tomatoes, cooked tofu, drizzling with tahini dressing, and sprinkling with toasted sesame seeds.
