Vegan Buddha Bowl with Tofu and Veggies
Ingredients
- sushi rice
- fried tofu
- curry roasted chickpeas
- broccoli
- red cabbage
- cocktail tomatoes
- tahini
Preparation
Cook the sushi rice according to package directions.
Fry the tofu in a pan until golden and crispy.
Roast the chickpeas with curry seasoning in the oven until crunchy.
Prepare the vegetables by chopping or slicing them as desired, such as steaming broccoli or leaving others raw.
Assemble all ingredients in a bowl, layering or mixing as preferred, and drizzle with tahini for dressing.
Tips
Use canned tomatoes, frozen broccoli, or pickled cabbage as substitutes if fresh produce is unavailable; they are still nutritious.
