Nutty Gooey Chocolate Muffins
Ingredients
- 2 1/2 cups old-fashioned oats
- 2-3 large overripe bananas or 1 cup applesauce
- 2 tbsp flax eggs
- 1/3 cup maple syrup
- 3/4 cup almond milk
- 2 tsp pure vanilla extract
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3-4 Tbsp cocoa powder
- 1 cup chocolate chips
Preparation
Preheat oven to 325℉.
Place the oats in a food processor and blend or pulse until they reach a rough, flour-like consistency.
In a large bowl combine flour, baking soda, baking powder, cacao powder and salt. Set aside.
Mash bananas well, they should have no lumps.
Add flax eggs, maple syrup, milk and vanilla. Mix to combine.
Add dry ingredients to wet ingredients and mix until just incorporated.
Fold in approximately 1/2 cup chocolate chips.
Scoop batter into muffin tins lined with paper wrappers until 3/4 full.
Sprinkle muffin tops with chocolate chips, press down lightly.
Bake at 350 for about 20 to 23 minutes, a toothpick inserted in the center of a muffin should come out clean.
