One-Pan Oven-Baked Pancake

Ingredients

  • 250g plain flour
  • 3 tbsp caster sugar
  • 2 tbsp baking powder
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch salt
  • 500ml plant based milk
  • 2 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • Blueberries

Preparation

  1. Preheat oven to 200°C and line a baking sheet with greased parchment paper

  2. Pour the flour, sugar, baking powder, and salt into a bowl and stir them together to combine

  3. Pour the plant-based milk, apple cider vinegar, and vanilla extract into a separate bowl and let the liquid rest for 5 minutes

  4. Pour the wet mixture into the dry mixture and whisk together until well combined, then let the batter sit for 3-4 minutes

  5. Pour the batter into the middle of the baking sheet and spread it evenly, push the blueberries into the pancake batter for even coverage, and bake for 15-17 minutes until fluffy and golden on top

  6. Carefully remove the pancake from the sheet, cut into slices, drizzle with maple syrup and soya cream, and serve immediately
