One-Pan Oven-Baked Pancake
Ingredients
- 250g plain flour
- 3 tbsp caster sugar
- 2 tbsp baking powder
- 1/2 tsp ginger
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch salt
- 500ml plant based milk
- 2 tbsp apple cider vinegar
- 2 tsp vanilla extract
- Blueberries
Preparation
Preheat oven to 200°C and line a baking sheet with greased parchment paper
Pour the flour, sugar, baking powder, and salt into a bowl and stir them together to combine
Pour the plant-based milk, apple cider vinegar, and vanilla extract into a separate bowl and let the liquid rest for 5 minutes
Pour the wet mixture into the dry mixture and whisk together until well combined, then let the batter sit for 3-4 minutes
Pour the batter into the middle of the baking sheet and spread it evenly, push the blueberries into the pancake batter for even coverage, and bake for 15-17 minutes until fluffy and golden on top
Carefully remove the pancake from the sheet, cut into slices, drizzle with maple syrup and soya cream, and serve immediately
