Orange Syrup Crepes for Pancake Day
Ingredients
Syrup
- 2 oranges
- 100g Clarks Original Maple Syrup
Crepe batter
- 125g plain flour
- 300ml soya milk
- 2 tbsp Clarks Original Maple Syrup
- 1 tbsp buckwheat flour
- 1 tbsp ground flaxseed
- 1 tbsp oil, plus more for greasing
- zest of 1 orange
- pinch of salt
- Additional orange slices for filling
- Mint for garnish
Preparation
Zest one orange and place the zest, juice of both oranges, and maple syrup into a small pan. Bring to boil, reduce heat, and simmer for 5 minutes or until reduced by half. Set aside to cool.
In a large bowl, measure the flours, flaxseed, maple syrup, oil, and salt. Add soya milk gradually, whisking until smooth. Mix in the orange zest.
Lightly grease a frying pan with oil and cook the crepes until lightly brown on both sides.
Serve with orange slices, mint sprigs, and the orange syrup. You can prepare the syrup while making the pancakes to save time.
