Vegan Crepes with Grated Apple Batter
Ingredients
- 600ml almond milk
- 250g plain flour
- 75ml maple syrup
- 1 apple
- 2 1/2 tbsp buckwheat flour
- 2 tbsp ground flaxseed
- 30ml rapeseed oil
- pinch salt

Preparation
Mix together the flours, ground flaxseed and salt.
Make a well in the centre and add in the maple syrup and oil. Add about half of the almond milk and mix to a smooth batter, then gradually add more milk, a little at a time, stirring in-between until you have a smooth, runny batter.
Finally grate the apple and add it to the batter, mixing well.
Heat a frying pan or hot plate with a little oil. Pour a ladle full of batter onto the pan and spread around with the back of a spoon or pancake spreader. Because of the grated apple they will be a bit thicker than normal. Cook until golden then flip over and cook until nicely browned on the other side.
Keep them between a folded tea towel while you cook the rest of the batter.
