Vegan Crepes with Grated Apple Batter

Ingredients

  • 600ml almond milk
  • 250g plain flour
  • 75ml maple syrup
  • 1 apple
  • 2 1/2 tbsp buckwheat flour
  • 2 tbsp ground flaxseed
  • 30ml rapeseed oil
  • pinch salt

Serving suggestions

  • Maple syrup
  • sliced apples
  • vegan cream or whatever you fancy

Preparation

  1. Mix together the flours, ground flaxseed and salt.

  2. Make a well in the centre and add in the maple syrup and oil. Add about half of the almond milk and mix to a smooth batter, then gradually add more milk, a little at a time, stirring in-between until you have a smooth, runny batter.

  3. Finally grate the apple and add it to the batter, mixing well.

  4. Heat a frying pan or hot plate with a little oil. Pour a ladle full of batter onto the pan and spread around with the back of a spoon or pancake spreader. Because of the grated apple they will be a bit thicker than normal. Cook until golden then flip over and cook until nicely browned on the other side.

  5. Keep them between a folded tea towel while you cook the rest of the batter.
