Hummus Feast with Paprika Roasted Cauliflower
Ingredients

- 1 cup cooked chickpeas
- 1/2 cup aquafaba
- 1 tablespoon tahini
- juice of one lemon
- 2 garlic cloves
- salt and pepper

Roasted vegetables
- eggplants
- asparagus
- potatoes
- cauliflower
- tamari
- tahini
- smoked paprika
- cayenne pepper
- 1 garlic clove
- lemon
- pepper
- balsamic vinegar
Preparation
Marinate the cauliflower with tamari, tahini, smoked paprika, cayenne pepper, garlic, lemon, pepper, and balsamic vinegar.
Place eggplants, asparagus, potatoes, and the marinated cauliflower in the oven to roast.
In a blender, combine the hummus ingredients and blend until smooth and creamy.
