Peanut Butter and Miso Roasted Aubergine

Ingredients

  • 2 aubergines sliced in half
  • 2 tsp miso paste (I use brown rice miso)
  • 3 tsp tamari
  • 3 tsp maple syrup
  • 2 tsp peanut butter (crunch or smooth)
  • 2 tsp water
  • Chopped fresh herbs, optional
  • pinch of sesame seeds, optional

Preparation

  1. Pre-heat your oven to 200C

  2. Slice the aubergines in half. Optionally, char them in a griddle pan on the flesh side

  3. Slice crisscross lines across the flesh to help the flavor penetrate deeper

  4. Add the miso, tamari, maple syrup, peanut butter, and water to a small mixing bowl and whisk until smooth to make the glaze

  5. Place the aubergines on a baking tray, cover evenly with the glaze, and bake in the oven for 25 minutes
