Pumpkin French Toast with Bananas and Blueberries
Ingredients
- 2 slices of Mikey's grain-free bread
- 2 tablespoons unsweetened almond milk
- 2 egg whites
- 2 spoonfuls of pumpkin purée
- nutmeg
- cinnamon
- pumpkin pie spice
- bananas
- ghee
- blueberries
- granola
- plain yogurt
Preparation
Mix almond milk, egg whites, pumpkin purée, nutmeg, cinnamon, and pumpkin pie spice to create the batter.
Soak the bread slices in the batter.
Cook the soaked bread until golden brown.
Sauté bananas with ghee and cinnamon for a few minutes to caramelize.
Warm the blueberries.
Top the French toast with caramelized bananas, warmed blueberries, granola, and serve with plain yogurt for dipping, adding more cinnamon if desired.
