Pumpkin Pie Protein Bars

Ingredients

  • 5 cups fine oat flour
  • 1/4 cup vanilla protein powder
  • 1/4 tsp salt
  • and 1 tbsp pumpkin pie spice
  • 1/3 cup cashew butter
  • 1/4 cup pumpkin purée
  • 1/3 cup honey
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla
  • 1/2 cup mini chocolate chips

Preparation

  1. Mix 1

  2. Cups fine oat flour with 1/4 cup vanilla protein powder, 1/4 tsp salt, and 1 tbsp pumpkin pie spice

  3. Add 1/3 cup cashew butter, 1/4 cup pumpkin purée, 1/3 cup honey, 1 tbsp melted coconut oil, 1 tsp vanilla

  4. Stir until well combined

  5. Add 1/2 cup mini chocolate chips

  6. Press into bread loaf pan

  7. Add more chocolate chips on top and refrigerate/freeze at least 30 min

  8. Store in fridge or freezer

  9. Sub at your own risk
