Quick and Healthy Three-Minute Omelette

Ingredients

  • 1 egg + 1 egg white
  • spring onion
  • 3 slices of halloumi cheese
  • 2 cups spinach
  • chia seeds to taste

Accompaniments

  • half tomato
  • 1/3 avocado
  • oregano
  • lemon
  • dijon mustard

Preparation

  1. Mix all the ingredients together.

  2. Heat a pan over medium heat and add the mixture.

  3. Cook until done, either as an omelette or scrambled.

  4. For the side, cut half a tomato and one-third of an avocado.

  5. Sprinkle with oregano and lemon juice.

  6. Optionally, add dijon mustard to taste.

  7. This can also serve as a breakfast or brunch idea.
