Quick Roasted Vegetable Pasta Lunch

Ingredients

  • Shell pasta
  • Tomatoes
  • Courgette
  • 1/4 tin chopped tomatoes
  • Herbs
  • Chilli
  • Paprika
  • Tomato purée
  • 40g lighter cheese

Preparation

  1. Preheat oven to 200°C and roast tomatoes and courgette until tender

  2. Cook shell pasta according to package instructions until al dente

  3. In a large bowl, combine cooked pasta, roasted vegetables, chopped tomatoes, herbs, chilli, paprika, and tomato purée

  4. Stir in lighter cheese until melted and serve immediately
