Quick Roasted Vegetable Pasta Lunch
Ingredients
- Shell pasta
- Tomatoes
- Courgette
- 1/4 tin chopped tomatoes
- Herbs
- Chilli
- Paprika
- Tomato purée
- 40g lighter cheese
Preparation
Preheat oven to 200°C and roast tomatoes and courgette until tender
Cook shell pasta according to package instructions until al dente
In a large bowl, combine cooked pasta, roasted vegetables, chopped tomatoes, herbs, chilli, paprika, and tomato purée
Stir in lighter cheese until melted and serve immediately
