Spinach Pesto Pasta

Ingredients

  • recipe:
  • 4 handfuls green leaves
  • 1 clove of garlic, crushed
  • olive oil
  • 4 tsp pumpkin seeds
  • 200g chopped tomatoes
  • 1 tbsp tomato purée
  • Spinach
  • chard and beetroot tops

  • 1 tbsp tomato purée
  • Black pepper

Preparation

  1. Pop it all in a food processor and blend, adding olive oil as you go till it makes a pesto

  2. Heat a small pan, add the pesto and gently cook through, add 200g chopped tomatoes, pepper and 1tbsp tomato purée

  3. Cook the pasta with the veggies and mix together
