Quick Vegan Tofu Salad Bowl

Ingredients

  • tofu
  • 1/2 tablespoon coconut aminos
  • asparagus
  • lime juice
  • greens (e.g., spring mix)
  • grapes
  • avocado
  • salsa
  • hemp seeds

Preparation

  1. Slice tofu into medium-thin slices and pan fry in a non-stick skillet for 4-5 minutes on medium heat.

  2. Add about 1/2 tablespoon coconut aminos to the pan, flip the tofu carefully, and fry for another 4-5 minutes. Set aside.

  3. Wash asparagus and cut off the bottom stringy part. Squeeze some lime juice over it, add to the pan, gently toss, and sauté for a couple of minutes.

  4. Assemble everything over a bed of greens, squeeze more lime juice over the greens, add grapes, avocado, salsa, sprinkle hemp seeds, and enjoy.
