Thai Style Buddha Bowl with Peanut Sauce

Ingredients

  • romaine lettuce

  • tofu
  • lime

Peanut sauce

  • peanut butter
  • liquid aminos
  • garlic powder
  • cayenne powder
  • lime juice
  • cashew milk

Preparation

  1. Cook quinoa according to package directions

  2. Roast tofu by preheating oven to 400°F, seasoning as desired, and baking until golden and crispy

  3. Chop the vegetables: romaine lettuce, cilantro, cucumber, bell pepper, and cabbage into bite-sized pieces

  4. Mix peanut sauce ingredients together until smooth and desired consistency is achieved
