Spring Roll Inspired Salad
Ingredients
- Romaine lettuce
- Quinoa
- Cabbage
- Red pepper
- Cucumber
- Cilantro
- Lime
- Roasted tofu
- Peanut sauce
Preparation
Chop the romaine lettuce, cabbage, red pepper, and cucumber into bite-sized pieces
Cook the quinoa according to package instructions and let it cool
Cube the roasted tofu if it is not already cut
Chop the cilantro finely
In a large bowl, combine the chopped vegetables, cooked quinoa, cubed tofu, and chopped cilantro
Squeeze fresh lime juice over the mixture
Drizzle with peanut sauce and toss everything together until well mixed
Serve immediately or chill before serving
