Red Lentil Pasta Bowl with Tofu
Ingredients
- Red lentil pasta
- Tofu
- Avocado
- Cucumber
- Savoy cabbage
- Fresh spinach
- Sriracha mayo
Tofu seasoning
- Smoked paprika
- Garlic powder
- Salt
- Pepper
Preparation
Prepare the tofu: Sprinkle smoked paprika, garlic powder, salt, and pepper over prepared tofu, shake to coat, place on a baking tray lined with baking parchment, and bake in a preheated oven at 200°C/400°F for 15-20 minutes until crisp and lightly golden.
Cook red lentil pasta according to package instructions
Steam savoy cabbage and fresh spinach until tender
Chop avocado and cucumber into desired pieces
Assemble the bowl: Layer steamed vegetables at the bottom, add cooked pasta, top with tofu, avocado, cucumber, and finish with sriracha mayo
