Refreshing Lemon Poppyseed Cookies with Zesty Drizzle
Ingredients
- 1 3/4 cup oat flour
- 10 tbsp unsalted butter, softened
- 1/3 cup cane sugar
- 2 tbsp honey or agave
- 1 egg, room temperature
- Zest & juice of 1 large lemon
- 1 tbsp poppy seeds
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
- 3/4 cup powdered sugar (for frosting)
- Juice of 1/2 lemon (for frosting)
- Extra poppy seeds & lemon zest (for topping)
Preparation
Cream together butter and sugar using an electric mixer. Beat in the egg, then mix in lemon juice and zest, honey or agave, and vanilla extract.
Add oat flour, baking powder, poppy seeds, and salt to the mixture. Mix until all ingredients are well combined.
Refrigerate the cookie batter for 30 minutes to an hour. Preheat the oven to 350°F (175°C).
Roll the chilled batter into 20 cookie balls, each about 1 tablespoon in size.
Place the cookie balls on a baking sheet and bake for 10-12 minutes in the preheated oven.
While the cookies are baking, prepare the lemon drizzle frosting: Mix together powdered sugar and juice of half a lemon until smooth.
Once the cookies are done baking, let them cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Once the cookies are fully cooled, drizzle the lemon frosting over them.
Top the frosted cookies with extra poppy seeds and lemon zest.
