Addictive Eggless Dark Chocolate Cookies
Ingredients
- Salted Butter: 2/3 cup (120g)
- Light Brown Sugar: 1/2 cup (60g)
- Granulated White Sugar: 1/2 cup (60g)
- Vanilla extract: 2 tsp
- Curd: 1 tbsp (15ml)
- All Purpose Flour: 2/3 cup + 2 tbsp (150g)
- Baking Soda: 1/2 tsp
- Dark Chocolate
- Sea Salt (to sprinkle)
Preparation
Ensure all ingredients are at room temperature
Use softened butter for mixing
Combine butter, light brown sugar, and granulated white sugar
Add vanilla extract and curd to the sugar mixture
Mix all-purpose flour and baking soda together
Combine the wet and dry ingredients to form dough
Incorporate dark chocolate into the dough
Chill the dough in the fridge for 1 hour
Shape the dough into cylindrical forms
Grease parchment paper with oil or butter before placing dough balls
Preheat the oven to 175°C for 10 minutes
Bake the cookies at 175°C for 10-12 minutes
Shape the cookies with a katori or cookie cutter while still hot
Tips
Make sure to use room temperature ingredients for best results
Substitute brown sugar with raw sugar if desired
Granulated sugar can replace castor sugar, but castor sugar may yield slightly different texture
Chilling the dough helps prevent excessive spreading during baking
