Rhubarb and Strawberry Pie
Ingredients
- 1 litre rhubarb
- 2-2.5 dl sugar
- 6 dl strawberries
Starch mixture
- 1 tbsp potato starch
- 1 tbsp vanilla powder
- 2 tbsp sugar
Crust mixture
- 2 dl oats
- 2 dl flour
- 200g vegan butter
- 1 dl sugar
Preparation
Chop the rhubarb into cubes and add to a pot together with the sugar. Cook until it's a bit soft but not too soft. Pour out the liquid and add the rhubarb to a pie tin. Chop the strawberries and add them as well.
Blend the starch, powder and sugar together and sprinkle it on top of the berries and rhubarbs.
Mix oats, flour, butter and sugar in a food processor. Spread the dough evenly on top of the pie until everything is well coated. Put the pie in the oven at 200 degrees for 40 minutes. Serve warm with vegan ice cream.
