Rhubarb and Almond Tray Bake
Ingredients
- 1kg rhubarb
- 300g SR flour
- 1 teaspoon baking powder
- 200g sugar
- 1 teaspoon vanilla paste or extract
- 100 ground almonds
- 280 ml plant milk (add more if required)
- 100 ml of neutral flavoured oil such as sunflower
- 20g Vegan butter
- 50 flaked almonds
Preparation
Mix dry ingredients.
Add oil and butter.
Then add plant milk.
Pour cake batter onto baking sheet lined with baking parchment.
Cover with chopped cubes of rhubarb.
Sprinkle with almond flakes.
Bake at 170°C in the oven for 45 minutes.
Test if top is springy and cake is done.
