Cherry and Almond Cake
Ingredients
- six eggs
- 3/4 cup sugar
- 3 cups ground almonds
- zest of 1 large unwaxed lemon
- 1/2 teaspoon salt
- 1 teaspoon almond extract (optional)
- 24 large cherries, pitted
- 1 tbsp flaked almonds
Preparation
Preheat oven to 180c
Beat the eggs and sugar till light and fluffy
Add the ground almonds, lemon zest, salt, and almond extract and combine
Pour into a 9 inch diameter (oiled) baking dish ?put the cherries on top of the batter and then sprinkle with the flaked almonds
Bake for about 40 minutes till an inserted knife comes out clean
Allow to cool before slicing
