Roasted Vegetable Panini with Spicy Tahini Dressing

Ingredients

  • 200g mushrooms, sliced⁠
  • 1 red pepper, sliced⁠
  • 1 yellow pepper, sliced⁠
  • 1 red onion, sliced⁠
  • 4 tbsp olive oil⁠
  • 1 tsp smoked paprika⁠
  • 1 tsp garlic powder⁠
  • salt and freshly ground black pepper⁠
  • 2 panini rolls⁠
  • for the spicy tahini dressing:⁠
  • 2 tbsp tahini⁠
  • 2 tbsp lemon juice⁠
  • 3 tbsp warm water⁠
  • 1 tsp paprika⁠
  • sea salt and freshly ground black pepper⁠

Preparation

  1. Pre heat the oven to 180C.⁠

  2. Tip the mushrooms, peppers and onions into a large roasting tin and toss with the olive oil, smoked paprika, garlic powder, sea salt and freshly ground pepper. Roast for 30 minutes.⁠

  3. To make the spicy tahini dressing, add the tahini, lemon juice, warm water, paprika, salt and freshly ground black pepper to a small bowl and whisk. Set aside.⁠

  4. Cut your panini in half and place in the oven to toast for 6 minutes. Spread the base of your panini with the spicy tahini dressing. Fill with roasted vegetables and drizzle more dressing over the top.⁠
