Silken Tofu Chocolate Pudding

Ingredients

  • 1/2 block of silken tofu
  • 1/2 bar of dark chocolate
  • 1 tablespoon coconut oil
  • Maple syrup (or liquid sweetener of choice)
  • Raspberries or Oreos for topping

Preparation

  1. Melt the dark chocolate and coconut oil in a bowl, microwaving in 15-second increments until silky smooth.

  2. Blend the silken tofu in a blender until smooth and free of lumps.

  3. Mix the melted chocolate and coconut oil into the blended tofu.

  4. Add maple syrup to taste for desired sweetness.

  5. Pour the mixture into a bowl and top with raspberries and crushed Oreos.

  6. Leave the pudding to set in the fridge for a couple of hours.

  7. Enjoy!
