Silken Tofu Chocolate Pudding
Ingredients
- 1/2 block of silken tofu
- 1/2 bar of dark chocolate
- 1 tablespoon coconut oil
- Maple syrup (or liquid sweetener of choice)
- Raspberries or Oreos for topping
Preparation
Melt the dark chocolate and coconut oil in a bowl, microwaving in 15-second increments until silky smooth.
Blend the silken tofu in a blender until smooth and free of lumps.
Mix the melted chocolate and coconut oil into the blended tofu.
Add maple syrup to taste for desired sweetness.
Pour the mixture into a bowl and top with raspberries and crushed Oreos.
Leave the pudding to set in the fridge for a couple of hours.
