Simple Greek Tzatziki Yogurt Sauce
Ingredients
- 1 cup unsweetened non-dairy yogurt or Greek yogurt
- 1 packed cup grated cucumber
- 2 tablespoons finely chopped fresh herbs (dill, mint, parsley, or purslane)
- 1 tablespoon lemon juice
- 1 tablespoon extra virgin olive oil
- 1 clove garlic
- 1/2 teaspoon salt
Preparation
Grate the cucumber using the large holes of a box grater.
Finely chop the fresh herbs and garlic.
In a bowl, combine all ingredients and mix until well blended.
Refrigerate for at least 30 minutes to allow flavors to meld before serving.
Tips
Serve tzatziki as a topping, dip, starter, or side dish with grilled vegetables, salads, pita bread, fritters, and falafel.
Tzatziki is primarily Greek, but similar sauces exist in Turkish (cacik), Balkan (tarator), Cypriot (talattouri), and Middle Eastern (jajeek) cuisines.
Make it dairy-free by using non-dairy yogurt for a delicious vegan version.
