Spaghetti Squash Dinner
Ingredients
- 2 cups shitake mushrooms
- 1/2 onion diced
- 2-8 cloves garlic sliced
- 2 cups baby tomatoes halved
- italian seasoning
Preparation
Cut squash in half lengthwise
Remove seeds with spoon and discard
Place face down in Pyrex dish with 1/2” water in bottom of dish
Bake @ 400° for 40 minutes
Whilst baking prep veggies
Water sauté onions until translucent
Add garlic and sautés a couple minutes
Stir in shitakes or preferred mushrooms
Sauté a few minutes and then add tomatoes. Once softened, add marinara, Italian seasoning to preferred taste. You could also use fresh healing herbs like oregano and thyme
Simmer sauce for 15 minutes
While sauce simmers, pull squash and use two forks to scrape the insides of the squash
They will loosen and give you spaghetti like shreds that are built into their own bowl
Top with sauce, raw onion and raw garlic for extra healing
You can add plant based cheese if you desire fats
Add salad on the side and it’s spaghetti dinner without the inflammation
