Spaghetti Squash Dinner

Ingredients

  • 2 cups shitake mushrooms
  • 1/2 onion diced
  • 2-8 cloves garlic sliced
  • 2 cups baby tomatoes halved
  • italian seasoning

Preparation

  1. Cut squash in half lengthwise

  2. Remove seeds with spoon and discard

  3. Place face down in Pyrex dish with 1/2” water in bottom of dish

  4. Bake @ 400° for 40 minutes

  5. Whilst baking prep veggies

  6. Water sauté onions until translucent

  7. Add garlic and sautés a couple minutes

  8. Stir in shitakes or preferred mushrooms

  9. Sauté a few minutes and then add tomatoes. Once softened, add marinara, Italian seasoning to preferred taste. You could also use fresh healing herbs like oregano and thyme

  10. Simmer sauce for 15 minutes

  11. While sauce simmers, pull squash and use two forks to scrape the insides of the squash

  12. They will loosen and give you spaghetti like shreds that are built into their own bowl

  13. Top with sauce, raw onion and raw garlic for extra healing

  14. You can add plant based cheese if you desire fats

  15. Add salad on the side and it’s spaghetti dinner without the inflammation

  16. I used lime and maple on the salad
