Spirulina Custard Toast for International Day of Happiness

Ingredients

  • 1 cup cashew milk
  • 1 cup coconut milk
  • 1/2 cup maple syrup
  • 3/4 tbs vanilla extract
  • 4 tbsp tapioca starch or cornstarch
  • 1/8 tsp turmeric
  • 1 packet SpiraVeg spirulina

Preparation

  1. In a medium saucepan over medium heat, whisk together the cashew milk, coconut milk, maple syrup, and tapioca starch.

  2. Bring the mixture to a simmer and continue whisking for 10 minutes on medium-low heat until the custard thickens.

  3. Whisk in the vanilla extract and then the turmeric, mixing until well combined.

  4. Transfer half of the custard into a mason jar and allow it to cool.

  5. Mix the remaining half of the custard with 1/2 packet of SpiraVeg spirulina.

To Assemble

  1. Use the back of a spoon to press down the center of your choice of bread (GF seeded multi-grains sourdough is recommended).

  2. Spoon in the custard mixture and add your preferred toppings.

  3. Create layers with both turmeric and spirulina custard, top with banana slices, and sprinkle with Ceylon cinnamon and more spirulina.
